MINI CHEESECAKES 
2 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar
1 tsp. vanilla
2 eggs, beaten slightly
20 vanilla wafers
1 can cherry pie filling (can use blueberries or other fruits, nuts)

Line muffin pan with foil laminated bake cups. Place 1 vanilla wafer in each cup. Mix cream cheese, vanilla and sugar on medium speed until well blended. Add eggs. Mix well. Pour over wafers, filling 3/4 full. Bake 10 minutes or longer at 325 degrees.

Remove from pan when cool. Chill. Refrigerate when ready to serve, top with chilled pie filling or fruits, nuts or chocolate.
