MINI CHOCOLATE CHIP CHEESECAKES 
18-20 Oreo cookies
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
2 eggs
1 c. mini chocolate chips

Blend well the cream cheese and sugar. Add eggs, one at a time. Stir in chocolate chips. Put cupcake papers in cupcake pan. Place one Oreo in the bottom of each cupcake cup. Fill each cup almost full with cream cheese batter. Bake at 325 degrees for 25 minutes. Cool before removing from pan. Refrigerate. May be served with whipped topping and chocolate curls if desired.

Everyone loved these an want me to make more. I was in hurry so I took them out of pan put them on cookie sheet in freezer to cool an set up about 45 minutes. When I first took them out of oven, some were cracked but after cooling it was no longer visible. Easy to make, look great, an tasted great. This is a keeper.
