BEST BRAN MUFFINS 
3 c. bran (All Bran, 100% Bran) cereal
1/2 c. vegetable oil
1 c. raisins (I sometimes use more)
1 c. boiling water
2 eggs, lightly beaten
2 c. buttermilk
1/4 c. molasses
2 1/4 c. whole wheat flour
4 tsp. brown sugar
2 1/2 tsp. baking soda
1/2 tsp. salt
3 tbsp. wheat germ
3 bananas
2 c. granola (100% all natural cereal)
1 c. chopped dried apricots (optional)
1 c. walnuts, coarsely cut (optional)

In a large bowl, combine cereal, oil, raisins, and pour boiling water over mixture. Allow to cool slightly.

In a small bowl, combine eggs, buttermilk and molasses. Add to mixture.

In another small bowl, combine flour, sugar, soda and salt. Add to cereal mix, stirring just enough to moisten dry ingredients.

Smush bananas (I think this is called puree). Add bananas and the rest of ingredients to the batter, stirring just enough to mix well. Cover the batter with plastic wrap or damp towel, and let stand at least 15 minutes, preferably 1 hour.

Preheat oven to 400 degrees. Grease 24 muffin cups and fill about 3/4 full. Bake 20-25 minutes. Check after about 18 minutes. Remove from oven and allow to cool before removing from pan. Cool on rack.
