SANDCAKE - QUEQUE ARENA - CHILE 
1 c. butter, room temperature
1 3/4 c. powdered sugar
2 whole eggs
2 egg yolks
Grated rind of 1 lemon
1/2 c. flour
1 1/2 c. cornstarch
1 tsp. baking powder
Powdered sugar for sprinkling

Oven: Preheat oven to 350 degrees. Time: 45 to 50 minutes.

Beat butter with sugar until creamy. Add eggs and egg yolks, one by one, and beat well after each. Add lemon rind and beat well. Add flour, cornstarch and baking powder and beat well.

Place in a buttered and floured pan. Put in 350 degree oven for 15 minutes. VERY IMPORTANT!: remove from oven and make a cut through the middle with a WET knife and put back into oven for remainder of time. (If this step is skipped, then the cake will not cook in the middle but will remain soggy and unrisen instead).

When done, remove from oven and, once cooled, sprinkle with powdered sugar by sprinkling it through a strainer.
