FRESH VEGETABLE/BEEF GOULASH | |
1 lb. ground beef 1 to 2 large onions 4 medium size tomatoes 1 to 2 ears of corn 1 to 2 lb. fresh okra salt to taste pepper to taste 1 c. tomato ketchup 1 tbsp. sugar (optional) 1 1/2 to 2 c. rice 2 tbsp. canola oil 1 c. water Brown ground beef and season with salt and pepper, then set aside to drain. Prepare vegetables as follows: Wash and clean. Chop onions and tomatoes. Cut corn off cob and cut up okra. Lightly saut all vegetables in canola oil (stir frequently to prevent sticking to pan) for 3 minutes. Add ketchup, water and beef. Add salt and pepper to taste. Add sugar to taste (optional). Allow to simmer for 35 to 45 minutes on low heat. Add more liquids if needed. Cook rice per package. To Serve: Use 1 ladle and/or big spoon of vegetable/beef mix over rice. Enjoy! |
