CREAM OF POTATO SOUP | |
2 c. diced raw potatoes 2 med. onions, minced 2 stalks celery, diced 2 1/2 c. boiling water 3 tbsp. butter 3 1/2 tbsp. flour 1 3/4 tsp. salt 1/8 tsp. pepper 2 c. milk Cook potatoes, onions and celery in boiling water. Cover until tender (20-30 minutes). Melt butter in saucepan. Add flour; mix until smooth. Add salt, pepper and milk. Cook, stirring until smooth and thick. Add potato mixture and liquid. Heat and serve. |
