PIMENTO CHEESE 
1 lb. extra sharp cheese
1 lg. can evaporated milk
2 tbsp. vinegar
1/2 or 1 tsp. dry mustard
7 oz. jar pimento, finely chopped
1 tsp. salt
Red pepper if desired

Put milk in top of double boiler. Grate or thinly slice cheese into milk and simmer until cheese is melted. Set off and cool. Add remaining ingredients.
