3 c. zucchini, chopped or shredded
1 onion, chopped
1/2 c. Bisquick
1/2 c. oil
1/2 c. grated cheese
6 eggs
1 tsp. parsley, chopped
1/2 tsp. salt
1/4 tsp. pepper

Mix above ingredients in a bowl. Pour into greased pie dish and bake at 350 degrees for 20-30 minutes. Sometimes I add 1/2 to 1 cup chopped ham.
