APPLE CRISP 
1 1/2 c. packed brown sugar
1 c. unsifted all-purpose flour
12 tbsp. unsalted butter
6 to 8 cooking apples (about 3 lbs.)
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
Grated rind of 1 lemon
Juice of 1/2 lemon
Half & half or ice cream (optional)

Combine the sugar, flour and butter in a mixing bowl and mix well with the fingers. Set aside.

Peel, quarter and core the apples. Cut the apple quarters into thin slices and place into a bowl. Add cinnamon, nutmeg, lemon rind and lemon juice; stir well to mix. Spoon the slices into a 9x9x2 inch square pan.

Cover apples with the butter and sugar mixture, spreading evenly. Bake for 1 hour at 375 degrees until topping is crisp and filling is bubbly. Serve warm, with a spoonful of half & half or ice cream.
