OVEN BAKED APPLE PANCAKE 
3 eggs, lightly beaten
1/2 c. milk
1 tsp. lemon rind, grated (opt.)
1/2 c. flour, plain
2 tart apples, peeled, quartered & sliced 1/4" thick
8 tbsp. butter, 1 stick
1/4 c. sugar, granulated
1/2 tsp. cinnamon

Preheat oven to 475 degrees. In a medium bowl, combine eggs, milk and lemon rind. Whisk in flour until blended; batter will be slightly lumpy. Melt 4 tablespoons butter in a 10" to 12" oven proof frying pan over medium heat. Add apples; saute until tender. Pour batter over apples. Bake 20 minutes.
