PEANUT BUTTER CUPCAKES 
1/2 c. butter
1 1/2 c. brown sugar
1/2 c. peanut butter
1 tsp. vanilla
2 eggs, beaten
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
2/3 c. milk

Cream butter, sugar and peanut butter. Add the vanilla and eggs, beating well. Sift together the flour, salt and baking powder. Alternately, add this to the egg mixture with the milk. Bake in greased or lined muffin pans at 350 degrees for about 30 minutes. Frost with any chocolate frosting. Makes about 20 cupcakes. (This is a great one if you are desperate for something sweet to eat but have nothing but a bunch of miscellaneous ingredients in your cupboard.)
