DAWN'S APPLE MUFFINS 
Very, very yummy muffins!

WET:

1/2 cup vegetable oil
1 cup sweetened applesauce
2 eggs
1 tsp. vanilla

DRY:

2 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. all-spice
1/4 tsp. nutmeg
1 tsp. cinnamon
1 1/2 cups diced apples (use your favorite apple)
1/2 cup walnuts/pecans (optional)

Preheat oven to 350°F.

In a bowl mix wet ingredients. In a separate bowl, mix dry ingredients. Slowly add dry to the wet, then mix in apples and nuts. Pour into either medium or large muffin tins, 2/3rds full.

Bake at 350°F for 20 to 30 minutes (medium) or 40 minutes (large) or until toothpick comes out clean.

Variation: If you want to make banana apple nut muffins, use 1 medium sized banana whipped well, and 3/4 cup applesauce.
