SWISS CREAMED PIES 
3 c. English peas
1 c. green onions
2 tbsp. butter
1/2 tsp. lemon peel (shredded fine)
3/4 c. shredded Swiss cheese
1 c. whipped cream
1 tsp. all-purpose flour

In a saucepan, warm peas. In a medium saucepan, cook onions in butter. Cook until tender but not brown. Blend in the flour and salt Add cream and lemon. Cool and stir until thickened and bubbly. Add cheese. Cool and stir until cheese is melted.
