POTATO SALAD 
3 lb. potatoes
6 hard boiled eggs
1 sm. onion, chopped
2 stalks celery, chopped
6 to 8 gherkin pickles, chopped
1/3 c. pickle juice
1 c. mayonnaise
Salt and pepper to taste

Boil potatoes in skins until tender, let cool. Peel potatoes and cube. Cut egg whites and set yolks to the side, salt and pepper to taste. Add onion, celery and pickles. Mix thoroughly. In separate bowl, mash egg yolks then add pickle juice and mayonnaise. Mix well and then add to salad. Chill at least 1 hour. Serves 8.
