BURRITOS 
2 c. pinto beans
Dash of salt
1 clove of garlic, minced
1 tsp. bacon drippings
6 white flour tortillas
2 green onions, finely chopped
1/2 c. grated Monterey Jack or cheddar cheese
Coarsely chopped romaine lettuce
Red or green chili sauce

Mash the beans, season to taste with salt and garlic and refry in drippings. Cover tortillas with aluminum foil and keep warm in a 250 degree oven. Spoon the hot bean mixture down the center of each warm tortilla. Top with chopped green onions and cheese. Roll and heat in 350 degree oven until the cheese melts, about 15 minutes. Nestle chopped lettuce around the warm burritos. Serve with a generous portion of red or green chili sauce. 6 burritos.

Burritos are usually served with pinto bean filling but beef, pork or chicken can be used. They are folded into neat packages, baked and served with a favorite sauce such as chili, tomato, taco or enchilada. Imagination is a basic ingredient.
