ORANGE TRIFLE 
1 lb. cake loaf
1/2 c. sugar
1 tbsp. flour
6 tbsp. orange juice concentrate
2 tbsp. lime juice
3 c. mandarin oranges
1/8 tsp. salt
4 eggs, separated
6 tbsp. water
1 tbsp. grated orange rind

Cut pound cake into large cubes. Place in 2 quart serving bowl. Place 1 1/2 cups orange segments over pound cake. In top of double boiler, mix together sugar, salt and flour. Beat in egg yolks, orange juice, water and lime juice. Place over boiling water and cook, stirring constantly, until mixture thickens slightly (10 minutes). Remove from heat and stir in orange rind. Cool. Beat egg whites until stiff peaks form. Fold into orange custard mixture. Pile on top of pound cake. Arrange remaining orange segments on top. Chill 1 hour.
