QUAKER VANISHING OATMEAL RAISIN
COOKIES
 
1 cup (2 sticks) butter, softened
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 tsp. vanilla
1 1/2 cups all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt (optional)
3 cups Quaker Oats (quick or old-fashioned)
1 cup raisins

Heat oven to 350°F.

Beat together butter and sugars until creamy. Add eggs and vanilla; beat well.

Whisk together flour, baking soda, cinnamon and salt; stir together until no streaks remain.

Stir this into the butter mixture. Stir in oats and raisins; mix well.

Drop by rounded tablespoonfuls onto an ungreased cookie sheet.

Bake for 10 to 12 minutes or until golden brown.

Cool 1 minute on cookie sheet; remove to wire rack.

Makes about 4 dozen.

Love it! There's only 2 of us, so I halved the recipe, except for the vanilla and cinnamon. I also used craisins instead of raisins, because the hubby asked for them. This is going in my recipe notebook FOR SURE! :)

I took the oatmeal raisins cookie recipe and made them to ways. I made them the traditional way then I substituted the raisins with mini chocolate chips. And doubled the vanilla. My kids loves them.

One of my favorite cookies is oatmeal butter scotch. Its the same recipe but instead of raisins you put in a bag of butter scotch morsels. They are fantastic. And well worth a try

I have a Bed and Breakfast and make them for my guest when they arrive. Everyone, I do mean everyone, loves them. I add chocolate chips every time but save some dough out for me without. Ahh...the perfect cookie.

Haven't yet tried this recipe but used version on oatmeal box lid using only brown sugar (3/4cup) and no granulated sugar. Also added 1/2 teaspoon baking powder and 1/4 tsp. cayenne pepper -(careful!). They tend to run a bit dry oatwise but maybe the extra butter in this recipe will help that. Sometimes I add Heath chips to the dark chocolate chips-half and half. Kids and grandkids love them.

I have made these cookies several times. It's the ONLY oatmeal cookie recipe I will ever use. I get big raves, and have never altered it in any way.. except to add water soaked cranberries in place of the raisins. Both ways are awesome.

These turned out amazing! Personally, I would have liked more raisins but my husband likes them the way they are. I will definitely be making these again! Maybe I will add extra raisins for myself!

I love these oatmeal rising cookies but I am trying to control my blood pressure and cholesterol so I substituted one of the eggs for 1 tbsp. flaxseed and 3 tbsp. water and 1/3 of the flour for flaxseed and no salt added. They were delicious! I have to say I was skeptical about it but they tasted great. Next time I think I will try sub. applesauce for half of the butter.

Best recipe for oatmeal raisin cookies ever. I have done the cranberries and nuts but I prefer the recipe as is with the addition of cinnamon baking chips... Delicious!!
