MOM'S SWEET POTATO PIE 
3 med. sweet potatoes (cooked in skins)
1/2 c. brown sugar
1/8 tsp. salt
1 stick butter not butter
2 eggs
2 tbsp. vanilla flavoring
3/4 c. evaporated milk

Cook potatoes until done. Remove the skins and mash potatoes. Add butter and blend it with potatoes until they are hot. Add brown sugar and salt and blend well. Add eggs and beat these as you blend them with potatoes. Add vanilla and milk. Blend well.

Pour pie filling into 9 inch pie shell if you like thick pies or divide and make two thinner 8 inch pies. Bake at 425 degrees for 10 minutes and reduce heat to 350 degrees and cook 15 more minutes. Sprinkle coconut on pie and let brown the last 5 minutes of baking time.
