BROCCOLI CASSEROLE 
1 med. onion, chopped
3 tbsp. butter
1 can cream of chicken soup
1/2 c. milk
1/2 lb. Velveeta cheese
3 c. cooked rice
2 pkgs. uncooked frozen broccoli

Saute onions in butter. Add to cream of chicken soup, milk and half of the 1/2 pound Velveeta. Heat all together until cheese melts. Fold in broccoli then rice. Pour in greased casserole dish. Cut the other half Velveeta cheese in strips and place on top. Bake at 350 degrees for 30 minutes.
