CHICKEN CASSEROLE 
8 chicken breasts (or thighs, legs & breasts)
2 lg. onions, sliced thin
6 tbsp. shortening
1/3 c. flour
1 1/2 c. sauterne
1 1/2 c. water
1 (6 oz.) can tomato paste
2 to 3 cans sliced mushrooms

Skin chicken. Season with salt and pepper. Brown in shortening. Remove chicken. Glace onions in same pan. Remove onions. Blend in flour. Add sauterne and water. Add tomato paste and mushrooms. Replace onions and cook a few minutes. Add salt and pepper.

Place chicken in a baking dish. Spoon sauce over. Cover. Bake 1 1/2 hours at 350 degrees. Serve with cooked noodles. Best prepared one day ahead and baked just before dinner.
