PLAIN PASTRY 
1 c. flour, unsifted
1/2 tsp. salt
1/3 c. shortening or lard
About 2 tbsp. cold water

Preheat oven to 450 degrees (very hot). Mix flour and salt thoroughly. "Cut" in fat with pastry blender or fork only until mixture is crumbly. Mixture will resemble corn meal in texture. Add water a little at a time while blending lightly. Dough should be just moist enough to cling together when pressed. For easier handling, cover dough tightly and let stand a few minutes. Shape dough into a ball. Roll out.
