PLUM CRUNCHIES 
1 1/2 c. drained canned plums, purple
1/3 c. sugar
1 tsp. grated lemon rind
2 tbsp. lemon juice
1 1/2 tsp. cornstarch
1 3/4 c. rolled oats
1/2 c. brown sugar, packed
3/4 c. flour
1/4 tsp. salt
3/4 c. shortening

Pit plums and cut into small pieces. Combine with sugar, lemon rind, lemon juice and cornstarch. Cook and stir over low heat until thick; cool.

Blend oats, brown sugar, flour, salt and shortening until crumbly. Place half of mixture in bottom of a greased 8 inch square pan and pack firmly. Spread with plum mixture and top with remaining crumb mixture. Pat lightly into filling. Bake at 350 degrees 35-40 minutes until lightly browned. 18 bars.
