PLUM CAKE 
1 c. flour (sift before measuring)
1 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 1/2 - 3 tbsp. butter
3-4 c. sliced, lg. unpared purple plums
1 1/2 tsp. vanilla
1 beaten egg
Enough milk to make 1/2 c. when mixed with egg and vanilla

TOPPING:

1 c. sugar
2 tsp. cinnamon
3 tbsp. melted butter

Resift flour with baking powder, salt and sugar. Add butter. Work these ingredients like pastry. Beat well in a measuring cup, 1 egg and 1/2 teaspoon vanilla. Add enough milk to egg and vanilla mixture to make 1/2 cup. Combine egg and milk mixture with flour and butter to make a soft dough. Place dough into an 8 inch square dish with floured palm or spread with a spoon.

Slice plums and push slightly into dough, placing them closely together in overlapping rows.

Combine sugar, melted butter and cinnamon together. Sprinkle over plums. Bake for 25 minutes at 425 F. oven. Serve warm or cold. Recipe may be easily doubled and baked in an 8 1/2 x 11 inch pan. Peaches or apples can also be used, but plums are best.
