GINGER BREAD | |
2 c. all-purpose flour 2 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. ginger 1/2 tsp. allspice 1 c. vegetable oil 1 c. molasses 1 c. sugar 3 eggs 1 c. boiling water Preheat oven to 350 degrees. Grease a 9x13 inch baking pan. Set aside. In a large bowl, sift together flour, baking soda, cinnamon, salt, ginger and allspice. Set aside. In another large bowl combine oil, molasses, sugar and eggs. With an electric mixer, on medium speed, beat 3 minutes until blended. Add dry ingredients beating until smooth and well blended. Quickly stir in boiling water. Pour into prepared pan. Bake 35-40 minutes or until cake tester inserted in center comes out clean. Cool in pan. Serve with whipped cream. |
