MIDWEST APPLE CAKE | |
1 1/4 c. all-purpose flour 1 tsp. baking powder 3 tbsp. sugar 1/2 tsp. salt 1/2 c. butter 1 beaten egg 2 tbsp. milk 6-8 tart apples, cut into eighths Sift together flour, baking powder, sugar and salt. Cut in butter. Combine beaten egg and milk and add to above. Press into 9 x 9-inch pan (or somewhat larger pan). Cut apples into eighths and arrange carefully on dough. TOPPING: 1/2 c. sugar 1/2 tsp. cinnamon 2 tbsp. butter Sprinkle topping over apples. Bake at 375 degrees for 30-40 minutes. Cake may be frozen well. After thawing, warm to freshen. May double recipe and press into 9 x 9-inch and 9 x 13-inch pans. Base will be thinner, which is also good. Dough is sticky, may need to flour fingers to press into pans easily. Top with apples. |
