ZUCCHINI SWEET PICKLES 
1 gallon peeled & seeded lg. squash, cut in 1" cubes
1 c. hydrated lime (get in garden store)

Dissolve lime in gallon cold water, soak squash in lime water 24 hours. Pour off and rinse for 10 minutes. Allow to drain on towel for about 3 hours. Mix 6 cups vinegar and 9 cups sugar; stir in 2 tablespoons pickling spice. Add squash and let stand 24 hours. Bring to boil and boil slowly for 35 minutes. Add green food coloring if desired. Seal hot. Makes about 3 quarts.
