PICKLED ZUCCHINI 
1 c. onion, sliced
1/2 c. red pepper, sliced
8 c. zucchini, sliced
1 tbsp. salt

Let stand one hour. Then pour salty water off. (Squeeze zucchini out by hand.)

1 c. vinegar
1 tsp. celery seed
1 3/4 c. sugar
1/2 tsp. mustard seed

Boil syrup and zucchini 5 minutes and then can or freeze. Makes 3 quarts.
