ZUCCHINI PICKLES 
1 lb. onions
1/2 pt. vinegar
12 oz. sugar
1 tsp. salt
2 lbs. squash, cubed
1 tsp. pickling spice
1 tsp. ground ginger, (pickling spice & ground ginger in cheese cloth)

Grate onions in pan of vinegar, simmer until soft. Add cubed squash and pickling spice and ground ginger spice bag. Cook until soft. Then add sugar; boil until it thickens. Put in jars and seal. Tastes like spiced apples.
