BAKED PORK CHOPS 
2 (1 1/2 oz.) envelopes instant oatmeal with raisins and spice
1/4 tsp. ground pepper or to taste
2 tbsp. prepared mustard
4 (3/4 inch thick) center-cut pork chops (about 8 oz. each)
4 tsp. vegetable oil

Heat oven to 400 degrees. Lightly grease a baking dish large enough to hold chops in a single layer. Mix oatmeal and pepper. Spread mustard on both sides of chops; press in oatmeal mixture to coat. Place in baking dish and drizzle each chop with 1 teaspoon oil. Bake 20 minutes. Turn chops and bake 15-20 minutes longer until browned and done. Makes 4.
