ITALIAN MEAT LOAF | |
1 1/2 lb. lean ground beef 1 egg 3/4 c. cracker crumbs 1/2 c. finely chopped onion 2 (8 oz.) cans tomato sauce with cheese (or pizza sauce) 1 tsp. salt 1/2 tsp. oregano 1/8 tsp. pepper 2 c. shredded Mozzarella cheese Measure all the ingredients into a large bowl, using only 1/3 cup of the tomato sauce. Mix thoroughly with a fork. Turn out onto a piece of waxed paper and shape into a rectangle 1 inch thick. Spread shredded cheese evenly over mixture. Roll meat loaf mixture, pressing ends to seal. Bake 1 hour at 375 degrees. Remove excess fat. Pour on remaining tomato sauce and bake for an additional 15 minutes. |
