ZUPPA DI ORZO 
1 lb. smoked pork, ham or bacon
1 c. dried pinto beans
1/4 c. or more barley
1/4 c. chopped leek or onion
Salt & pepper to taste
1/4 c. chopped parsley
3 qt. water

Place all ingredients into a large kettle. Bring to boiling point. Let simmer 1/2 hour. Skim off. Continue simmering for 3-4 hours until beans are done.
