ZUCCHINI SOUP 
1 slice bacon
1/4 c. chopped onion
1/2 c. beef broth
Salt and pepper to taste
Parmesan cheese, grated
4 c. sliced zucchini
1 clove garlic, chopped
1/4 tsp. basil

Combine all ingredients, except Parmesan, in saucepan. Simmer about 20 minutes or until zucchini is tender. Puree in blender or food processor. Sprinkle with Parmesan cheese. Serve hot. Makes 3 cups (for a creamier soup, milk may be added after pureed.)
