BRANDIED PEACH TOPPING 
5 c. peaches, pitted and sliced
1 c. sugar
3 tbsp. flour
3 jiggers of brandy
Cinnamon to taste
Vanilla or peach ice cream

Mix peaches, flour, sugar and cinnamon and 1 1/2 jiggers brandy. Pour into an oven-safe dish and bake 15 to 25 minutes at 350 degrees. Cool 10 minutes. Lace with remaining brandy just before serving. Serve warm over ice cream.
