BRANDIED PEACH JAM | |
4 c. frozen peaches, thawed 2 tbsp. lemon juice 1 c. brandy 1 pkg. powdered pectin 5 c. sugar Drain thawed peaches. Coarsely chop. Combine peaches, lemon juice and brandy in large saucepan. Place on medium heat and simmer 5 minutes. Stir in pectin and cook over high heat until mixture comes to full boil. Add sugar and return to rolling boil. Boil hard 1 minute, stirring constantly. Stir 3 minutes to distribute fruit. Pour in hot sterile jars, leaving 1/4 inch headspace. Process 10 minutes in boiling water bath. Yield 7 half pints. |
