BARLEY SALAD 
1 box barley
1 lg. tomato
1 cucumber
1 green pepper
1 handful fresh parsley
1 handful green onion tops
Salt and pepper to taste
Oil and vinegar to taste
1 tsp. oregano
1 tsp. garlic powder

Cook barley with salt as box says, about 45 minutes to 1 hour. Drain and rinse. Cut vegetables into small pieces. Mix all ingredients into barley. Mix well. Can be made 1 or 2 days before you need it. Mix again and serve.
