OVEN FRIED PORK CHOPS 
6 pork chops
1 c. Saltine crackers
1/4 c. Parmesan cheese
1 egg

In food processor or blender, process crackers until you have relatively fine crumbs (will need about 1 cup crumbs). Add approximately 1/4 cup Parmesan cheese, and black pepper to taste. In shallow bowl, beat egg until frothy, adding a tablespoon of water. Press small amount of cracker/cheese mixture on both sides of pork chops. Dip each in egg wash and back in cracker crumbs. Place on cookie sheet coated with non-stick spray. Bake at 375 degrees for approximately 1 to 1 1/2 hours, depending on thickness of chops. Turn once during baking, using a wide spatula and being careful to avoid tearing the coating from the chops.
