4 c. diced fresh apples
2 c. sugar
3 c. flour
1 c. cooking oil
2 eggs
1 c. chopped nuts
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. vanilla

Mix together apples and sugar and let stand 1 hour. Sift together flour, baking soda and spices. Beat eggs, add oil and vanilla. Add apple mixtures. Combine flour mixture with eggs. Stir in walnuts. Bake in greased, floured 10 inch tube pan in 350 degree oven for 1 hour or until done. Frost with plain white icing and top with a sprinkle of chopped nuts
