NARCISSA'S CAJUN SHRIMP ETOUFEE 
1/2 c. butter
1 1/2 c. chopped onion
1 clove garlic, minced
1/2 c. chopped celery
1/2 c. chopped green pepper
1 tbsp. flour
1/2 c. water
2 tbsp. tomato paste
1 tbsp. Worcestershire sauce
2 lb. clean shrimp
1 tsp. salt
1/2 tsp. pepper
1/2-1 tsp. hot pepper sauce

Melt butter in Dutch oven. Saute onions, green pepper, celery and garlic. Mix flour with water and add to sauce with tomato paste and Worcestershire sauce. Simmer 15 minutes. Add shrimp, salt and pepper. Simmer 15 minutes more. Add pepper sauce. Cook 5 minutes more. Serve over hot rice.
