LASAGNA 
1 lb. ground beef
1 (32 oz.) jar Prego spaghetti sauce
1 tbsp. olive oil
1/2 c. Parmesan cheese
1 pkg. lasagna noodles (approximately 12)

CHEESE FILLING:

1 lb. Ricotta cheese
2 eggs
1 tbsp. chopped parsley
12 oz. Mozzarella cheese

I. Meat Sauce: Brown meat in olive oil; drain excess oil. Add spaghetti sauce and simmer for 20 minutes (add water if necessary).

II. Cheese Filling: Beat ingredients for cheese filling together. Set aside.

III. Finishing Up: Prepare noodles according to package directions. Grate Mozzarella cheese. Preheat oven. Spray 13 x 9 inch pan with Pam. Spread thin layer of meat sauce on bottom of pan. Make 3 layers in pan, using noodles, then cheese filling, then Mozzarella cheese, then meat sauce. Sprinkle Parmesan cheese on the top. Bake for 35-45 minutes or until bubbly hot. Let stand for 10 minutes before cutting.

Note: If prepared ahead of time and refrigerated, increase baking time by 15 minutes.
