MEXICAN RICE 
1 1/2 c. uncooked rice
1/2 c. chopped onion
1/2 chopped green pepper
3 c. chicken broth
1/2 (10 oz.) can Rotel tomatoes & chilies
1 c. frozen peas (optional)
Oregano & garlic as desired

Brown first 3 ingredients in oil for 10 minutes, stirring occasionally. Stir all ingredients together and bring to boil. Cover and simmer until all the water is absorbed.
