BEEFY RICE CASSEROLE 
1 1/2 lbs. ground beef
1 med. onion, chopped
1 bell pepper, chopped
1 (10 oz.) can cream of mushroom soup
1 can whole kernel corn, drained
2 c. cooked rice
1 can Rotel or tomatoes
1 sm. can sliced mushrooms
1 c. grated cheddar cheese

Saute meat, chopped onions and bell peppers. Add all remaining ingredients, except cheese. Pour into greased casserole dish. Top with grated cheese. Bake at 325 degrees for 30 minutes or until cheese melts and is slightly browned. Serves 6 to 8.
