CHINESE CHICKEN SALAD 
3 chicken breast halves
5 tbsp. soy sauce
4 c. shredded lettuce
1 carrot, shredded
1/2 c. chopped green onion
2 tbsp. minced fresh cilantro or parsley
1/3 c. distilled white vinegar
2 tbsp. sesame seeds, toasted
2 tsp. sugar
1/2 tsp. ground ginger

Simmer chicken in mixture of 1 tablespoon soy sauce and 2 cups water, 15 minutes or until tender. Remove; cool. Skin and bone chicken; shred meat with fingers into large bowl. Add lettuce, carrot and green onions.
