SHRIMP FRIED RICE 
1 lb. or 2 lb. med. or large shrimp after cleaning cut up or leave whole
1 c. chopped onion
1 c. chopped carrots
1 c. chopped green peppers
1 c. chopped celery
1 c. chopped cabbage (optional)
1 stick of butter
2 c. Uncle Bens rice
Salt and pepper to taste
Soy sauce to taste
1 pkg. Lipton onion soup mix

Cook 2 cups of Uncle Bens rice. Saute shrimp in a little bit of oil. Stir until done. Set aside.

Stir fry all of these ingredients together in butter until cooked. Onions, celery, bell pepper, carrots, (cabbage is optional). When cooked to your taste, add salt, pepper and soy sauce and Lipton onion soup package.

Add sauteed shrimp. If too thick add a little water. Serve over rice. Will serve 6 to 8 people.
