DATE AND NUT BREAD | |
1 c. chopped dates 1 tsp. baking soda 3/4 c. boiling water 1 egg 3/4 c. light brown sugar 1 tsp. salt 1 tsp. vanilla 1 1/2 c. flour 1 tsp. baking powder 3/4 c. chopped walnuts 1/4 c. melted shortening Grease 8"x4"x3" loaf pan well. Sprinkle baking soda over chopped dates. Pour boiling water over top. Mix well and let cool. Beat egg until light. Add light brown sugar gradually, beating between additions. Add salt and vanilla. Combine creamed mixture with date mix. Sift flour and baking powder and add. Mix chopped walnuts with a little flour; mix in. Add melted (not hot) shortening; mix well. Pour into prepared loaf pan and bake at 350 degrees. Loaf springs back at a light touch when done. Date and nut bread slices and tastes best when day old. |
