TORTELLINI SALAD 
1/2 lb. tortellini pasta
1/2 lb. spinach tortellini
1 bunch broccoli or pkg. frozen broccoli
1 jar roasted peppers, cut in strips
1 med. red onion, diced
1/2 lb. salami, cubed
1/2 lb. Provolone cheese, cut in cubes

DRESSING:

Salt and pepper
1/2 c. red wine vinegar
1 1/2 c. olive oil
1 tbsp. Dijon mustard

Boil tortellini 8 to 10 minutes. Drain, cool in cold water. Boil broccoli 5 to 8 minutes. Drain, cool. In large mixing bowl combine tortellini, drained, broccoli, peppers, onions, salami and cheese. Set aside.

In small bowl, combine dressing ingredients. Blend. (May also use covered shaker and shake well.) Pour dressing over salad, toss well. Serve. Great for cookouts.
