POCATELLO POTATOES 
8 to 10 med. potatoes, boiled in jackets
3/4 lb. Velveeta cheese
1/2 c. chopped onion
1 sm. jar red pimientos
2 sticks melted butter
2 slices toasted bread, cubed
Salt to taste
Onion salt to taste
1 tsp. garlic salt
2 tbsp. parsley
Paprika

Preheat oven to 350 degrees. Cool potatoes with jackets on. Diced potatoes, leaving some peeling. Cube cheese and mix with potatoes. Simmer onion in butter for 5 minutes. In separate bowl, mix onions, butter, pimientos, bread cubes, onion salt, garlic salt and parsley. Then pour over potatoes and cheese. Toss. Spread into baking dish and sprinkle with paprika. Bake 30 minutes.
