GERMAN HOT POTATO SALAD 
2 lbs. sm. potatoes
1 tsp. salt
1/2 c. diced bacon
1/2 c. minced onion
1 1/2 tsp. all purpose flour
4 tsp. sugar
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. vinegar
1/2 c. water
1/4 c. minced onion
2 tbsp. parsley
1/2 tsp. celery seed

Cook potatoes in jackets in boiling water with 1 teaspoon salt until tender; drain; peel and slice.

In a small skillet, fry bacon until crisp. Add 1/2 cup minced onion; saute until tender. In bowl, mix flour, sugar, 1 tablespoon salt and pepper. Stir in vinegar and water until smooth. Add to bacon; simmer, stirring until slightly thickened. Pour over potatoes. Add 1/4 cup minced onion, parsley and celery seeds. Toss lightly.

Serve warm.

Makes 4 to 6 servings.

There are hundreds of recipes out there for German Potato Salad...and this one sounded the most authentic of those I read. My father is very German, wanted something like his mother used to make him, so I tried it. Only thing I did was cut back on the salt and added a few green onions with the regular onion to use them up. This was great! 8 pounds of potatoes and it was all gone in one night, true keeper!!
