GRANDMA'S KOLACHES 
2 pkg. dry yeast
1 c. potato water (lukewarm)
1 c. mashed potatoes
1 c. milk
2 whole eggs and 2 egg yolks
1 stick butter
1 c. sugar
2 tsp. salt
1/4 tsp. mace
8 c. flour

Dissolve yeast in potato water. Add 1 tablespoon sugar and enough flour to make sponge. Scald milk then add sugar and butter and salt. When cool, add 1 cup flour and beat well. Add beaten egg and mashed potatoes; beat well. Add yeast. (It should look like a sponge.) Beat again.

Add flour. (Adding a little at a time and beat thoroughly so that after adding flour you can touch back of hand and it doesn't stick. Seldom uses all 8 cups.) Cover. Refrigerate overnight.

Next day - flour board. Make into walnut size. Grease cookie sheet; brush balls with melted butter. Let raise until double. Press center with fingers. Fill with whatever filling you choose. Let raise again. Bake at 450 degrees for 8-10 minutes.
