BAKED SQUASH CASSEROLE 
3 lbs. yellow squash
3 eggs, beaten
3 tbsp. chopped onion
2 c. cracker crumbs
2 tsp. parsley flakes
1/2 c. butter
1/2 tsp. Tabasco sauce
Salt & pepper to taste

Slice squash in 1/2" pieces. Boil 3 minutes or until tender. Drain. Add onions, eggs, and seasonings. Mix until blended. Pour into buttered casserole. Mix butter and crumbs. Sprinkle over squash. bake at 350 degrees for 40 minutes or until browned.
