HOT MILK SPONGE CAKE 
2 c. cake flour
2 c. sugar
4 eggs
1/4 tsp. salt
2 tsp. lemon juice
1 c. hot milk
2 tbsp. butter

Sift flour and measure and sift flour and salt 3 times. Beat eggs until soft peaks form - 5 to 7 minutes. Add sugar slowly beating into eggs (beating constantly). Fold in flour and add hot milk and lemon juice and stir quickly. Bake in ungreased tube pan 35 minutes at 350 degrees. Let cake cool in pan upside down.
